There is a version of Luca Galli’s life in which he never leaves a law office in England. It is gray there, he says, and grim, and none of it matched the person he actually was. So, in 2006, he walked away from law and into food, drawn less by any single dish than by the strange mix of precision and pleasure the industry demanded.
